I believe it would make more sense to acquire your travelling horse, and then have to train it for battle.
Basically I would like to see the horse gain its own experiences as you ride it into battle, and as you lvl that way, so would it in a different way.

The more experienced your horse is in battle, the better bonuses it will give you in battle.

I don't know if I like the training idea. Some horses are just a better breed than others. Either way would be fine I suppose, but even in real life, different classes of horses cost different amounts of money.

Well, I doubt the same horses carrying gnomes, halflings and goblins would be too happy to see a Lesser Giant walk their way.

There will most definitely be different breeds of horse. But any horse, given enough battle experience can be given the title of warhorse. The larger breeds are usually bred for war, but only because their riders were large too. Obviously you wouldn't war-train a horse that was bred to help farm a crop, but in most cases training would involve an experienced rider, and could, in theory, work for most any breed of horse.
