FFXI, and that was my MMO for a good year and a half

I never played it on PS2 though. Basically what happened with that was that movement and camera were mapped to the analog sticks. Enter and Escape were X and O. Triangle was Open Main Menu. I forget what [ ] was. Then the shoulder buttons were mappable hotkeys. But since you needed to type to communicate anyways, there were also all the Ctrl/Alt + number hotkeys as well. Additionally, it's about to get released on the Xbox360, so it's very much a console/PC hybrid. On that note though, Vanguard wouldn't translate too well at all since it wasn't designed firstoff to be for a console.
And as a side note... More buttons =/= better game. Those with the most fluid and intuitive control schemes are what end up being the best. Honestly, most PC games have too many unmemorable shortcut keys that I just never end up learning too well. MMOs are fine, since it's all mainly based on numbers represented in a hotbar and I can learn that...
