I personally like 1h/shield. Shield bash is low end cost, does decent damage, good crit rate to open up Decimate. Against casters the extra stun is big. The improved block chance triggers my L18 counter frequently.
I totally agree the bow is a big part of Warrior pvp. IS does good damage and can sting hard on a crit. I've dropped equal level casters 1/3rd health easy on a IS crit.
As for offensive vs defensive I usually use offensive.. losing Decimate/Oblit gimps my ability to hurt anyone.
