Knight classes in every game from EQ onwards have used two-handers while warriors are the dual-wielding tank. It is a well-established tradition, and one that makes sense, in my opinion. Leave dual wielding to the light fighters, DK's have our massive two-handers.
The "bonus damage" you're referring to on dual wield is actually the damage being reported for the mainhand and offhand separately. If you look in your combat log they total the number together to show you what the ability actually hit for. If you're looking for dps, Warriors far outstrip DK's. This has less to do with dual wield and more to do with abilities.
