Actually, you'd be surprised how EASY it is to move in platemail - the common image of "the knight lumbering about, falling off his horse and unable to get up" is a myth. I have seen men in full plate doing rolls. The weight is distributed around the body. I myself have fought in 80lbs of Samurai armour without too much trouble, you just have to strike down not out to avoid overbalancing.

Also, it's not uncommon to use a sword in your main hand and a parrying dagger in your off hand.
