Almost every quest finishes by talking to an NPC and receiving your reward. This is indicated (as has already been stated) by the quest showing as completed with a green check.
These simple fed-ex quests have only 1 interim step before completion, and that is to receive the item you need to deliver. Since the NPC who gives you the quest hands you the item to be delivered at the same time, it immediately shows up as being "completed". AND, when you die and loot your corpse, you pick up the item in question, thus "completing" the quest again. The same thing happens with items you need to gather X number of and turn in. If you check those quests after you've died and before you've looted, you'll notice they're not complete.
