Raid 1 should only have your 2 160 gig drives showing as 1 160 gig drive as 1 is the redundancy (mirror) RAID.

0 is faster, but not by a whole lot. If you're comfortable changing to a striped raid array, you will see some improvement, but don't expect it to be a magic bullet. Personally, I have been unimpressed with how much switching to raid 0 has helped.
