It may be difficult for some to choose what crafting profession one might want till there is more information. For me it is not that hard to choose regardless of how the crafting process/implementation will be done, as I know I would like to make leather Armour or cloth depending on what the monk can wear.
If the tailoring profession requires specialization in leather armoring, making sails and so on then it is obvious I will be taking the leather armoring specialization.
My secondary skill will be whatever makes my main profession easier.
I agree with you that Wood, Stone or metal harvesting would for most part be common resources, but I still think components for rare and epics will be rare and require epic mobs that may require raids and many crafters to work together. At least that is what I read in that real long thread by Silius.
