Pine saplings are for the training quest only, which means you may get no skillups from them afterwards. The stuff you harvest for the tutorial aren't "real" resources, and can't be used in recipes. If you're a lumberjack I suggest trying to find some "weakened [insert tree name]" in your local area - there should be some not too far afield - and cutting them down to see if you get any skillups.
