You can have both crafting and harvesting skills, either one, or neither depending on your mood and your goals.
  • You get to specialize in two of the five harvesting types (reaping, skinning, mining, quarrying, or lumberjacking (as opposed to Applejacking, which has its adherents as well but ...).
  • You can learn one of three crafting professions and then specialize to one of it's sub-professions at level 11.
Yes, as a Carpenter, you want Lumberjack as one of your harvesting skills and quarrying as the other (serves the Mineralogist side of Artificer).

The idea between houses and boats is that they are big, complex things needing components from all the professions; however, the prime professions are Carpenters (for boats) and Mineralogists (for houses) -- both Artificers.
