Doesn't really matter as Ysharros said. You can harvest for the purpose of supplying crafters who don't care to harvest themselves. Also presumably since your harvesting is so high you'll have a good supply of mats without having to stop and harvest as much. Aannnnddd...you'll be less likely to run into a situation where you learn a recipe and you can't yet harvest the mats it needs, or you get into a new zone and find the next tier of resource and can't harvest it yet.
