At level 10 you specialize in one of the two specializations for each profession. So for example you become a Leatherworker or Tailor (can't be both) as your specialization and should not see any work orders or recipes for the other specialization (this was still being cleaned up at end of beta). You do continue to advance in the Outfitter skill which has it's own associated recipes and work orders. So you end up with 2 out of the 3. Refining is it's own skill set and appears to allow you to refine both materials associated with your profession.
